Pink Peppercorn & Citrus Butter

Served with assorted artisan rolls at The 2026 Distinguished Alumni Gala
This signature butter pairs the gentle floral warmth of pink peppercorn with the aromatic zest of orange, lemon and lime. Whipped just enough to feel light while retaining a rich, luxurious texture, it transforms the gala's bread service into a distinctive first taste of the evening.
A Thoughtful First Detail
At The 2026 Distinguished Alumni Gala, even the bread service was designed with intention. Pink peppercorn contributes fragrance and mild spice rather than aggressive heat, while three varieties of citrus create layers of fresh aroma without adding excess acidity. The butter is served in a detailed molded form, reinforcing the care and precision carried throughout the menu.
Pink Peppercorn & Citrus Butter
Yield: Approximately 2 cups or sixteen 1-ounce servings Preparation time: 30 minutes, plus 2-4 hours for chilling Dietary notes: Vegetarian and gluten-free
Ingredients
1 pound unsalted European-style butter, preferably 82% butterfat
4 grams pink peppercorns, approximately 2 teaspoons before grinding
8 grams finely grated orange zest, approximately 1 tablespoon plus 1 teaspoon
4 grams finely grated lemon zest, approximately 2 teaspoons
1 gram finely grated lime zest, approximately 1/2 teaspoon
2 1/2 grams fine sea salt, approximately 1/2 teaspoon
Preparation
Grind the peppercorns: Process the pink peppercorns in a clean spice grinder until powder-fine. Pass them through a fine-mesh sieve and regrind anything that remains. Remove any hard stem fragments or coarse pieces so the finished butter remains perfectly smooth.
Prepare the citrus: Wash and dry the orange, lemon and lime. Using a Microplane, remove only the colored outer peel and avoid the bitter white pith. Mince the zest again with a very sharp knife so no long strands remain. Combine the three zests with the fine sea salt and rub them together until evenly distributed and fragrant.
Temper the butter: Cut the butter into uniform pieces and allow it to soften to 65-68°F. It should yield easily under gentle finger pressure while remaining cool, opaque and fully emulsified. Do not microwave or allow any part of the butter to melt.
Cream the butter: Place the softened butter in a mixer bowl and beat with the paddle attachment on low speed for 2-3 minutes, until completely smooth. Stop and scrape the bowl and paddle thoroughly.
Add the flavorings: Add the ground pink peppercorn and citrus-salt mixture in two increments on low speed. Scrape between additions and continue mixing until the flavorings are completely uniform, with no concentrated streaks or clumps.
Whip with control: Change to the whisk attachment and whip on medium speed for 3-5 minutes, just until the butter is smooth, slightly lightened and evenly aerated. Avoid high speed or excessive whipping, which can create large air pockets and weaken the butter's texture.
Rest: Cover the butter and let it stand at room temperature for 10-20 minutes, ideally between 68-72°F. Fold slowly by hand or mix with the paddle on low for 30-60 seconds to relax the foam and remove large air pockets.
Shape and chill: Transfer the butter to a covered serving crock, shape it into a log using parchment, or press it firmly into clean, dry silicone molds. When molding, work from the center toward the edges and tap gently to release trapped air. Refrigerate for 2-4 hours, until completely firm.
Serve: Unmold while cold, if applicable, and allow the butter to temper for only 5-10 minutes before serving with warm assorted rolls. It should retain its shape while spreading easily.
Chef's Notes
Use only the colored portion of the citrus peel and process every seasoning extremely fine. Do not add citrus juice, cream or other liquid; additional moisture can weaken the butter's emulsion and prevent clean molding. If preparing the butter ahead, keep it tightly covered under refrigeration so it does not absorb surrounding aromas.
