Chocolate-Encrusted Pistachio Mousse Cup

Filled with Sponge Cake & Lemon CurdGarnished with Oat & Cinnamon Crumble, Mint and Macerated Berries

Creating this dessert began long before the final plate was assembled. Designed to reflect the event's color palette while honoring the university's 150th anniversary, every component brought together classical pastry technique, careful craftsmanship and modern culinary technology.

The centerpiece began as a smooth pistachio mousse formed inside a precision mold. Once completely frozen, each delicate shell was carefully released and coated with a custom-blended, food-grade paint. The color was spray-applied in fine layers to create an even finish that matched one of the signature colors selected for the event.

Inside the molded pistachio mousse was a gluten-free sponge cake made entirely from scratch. The tender cake was paired with bright lemon curd, creating a fresh citrus contrast to the rich, nutty mousse.

A decorative white chocolate ring added another custom element to the presentation. Developed with the assistance of 3D-printing technology, the ring was designed to achieve a precise and consistent shape. Each piece was then finished with a second custom color and carefully sprayed to coordinate with another shade from the event's palette.

The commemorative chocolate coin was created especially for the university's 150th anniversary. Its detailed mold was designed and produced in-house using 3D-printing technology before being filled with properly tempered chocolate. Once set, every coin received a delicate gold finish that highlighted the embossed "150" and transformed it into an edible tribute to this historic milestone.

To complete the plate, a luminous gold mirror glaze was layered beneath a crisp oat and cinnamon crumble, adding both warmth and texture. A beautifully piped whipped garnish, fresh mint and macerated berries brought balance, color and freshness to the final composition.

The result was more than a dessert-it was a carefully constructed celebration of flavor, design and innovation. From the custom-molded mousse and scratch-made cake to the 3D-designed chocolate elements and event-specific colors, every detail was created with purpose.

The accompanying video offers a behind-the-scenes look at the process, revealing the many steps, techniques and finishing touches required to bring this commemorative dessert to life.
